Ingredients :

Method :

  1. Preheat oven to 175°C. Line an 8-inch square baking pan with parchment paper.
  2. Prepare the zucchini: Grate it finely. Lightly squeeze out excess water, but don't make it completely dry—the moisture is what keeps the brownies fudgy.
  3. In a bowl, whisk together the egg, melted butter, sugar and vanilla.
  4. Add the grated zucchini and mix well.
  5. In another bowl, combine whole-wheat flour, oats flour, cocoa powder, baking powder and salt.
  6. Gently fold the dry ingredients into the zucchini mixture. Don't overmix.
  7. Fold in the chocolate chips and walnuts. If the batter looks unusually thick, add 1–2 tbsp milk.
  8. Transfer to the prepared pan and spread evenly. Sprinkle a few extra chocolate chips on top.
  9. Bake for 25–30 minutes. The centre should still look slightly soft when you remove it from the oven.
  10. Cool completely before slicing. For extra-fudgy brownies, refrigerate for 30–60 minutes before cutting.
