Passion and Plates in Perfect Harmony:

In the village of Navelim, Bryden, a mechanical engineer by profession and a passionate food lover, runs the renowned Blue Heaven Restaurant at Mungul Colva since 2000. Bryden is a free thinker, non-judgmental, and an extrovert who enjoys occasional moments of introspection. He believes in maintaining good vibes and distances himself from negative influences. With a love for learning and helping others grow, Bryden strives to make people smile, going beyond limits to ensure their happiness even during his own challenging times. 

Menino Fernandes, a Bcom graduate, started as a front office assistant at Dalmia Resorts Cavelossim, later becoming an income accountant at Ramada Renaissance Resorts Mobor. In 1994, he transitioned to the culinary world, eventually becoming a Senior Sous Chef, overseeing galley operations for over 6000 guests and crew. Revitalised during the COVID-19 pandemic, Blue Heaven restaurant stands as a testament to their dedication to preserving Goan heritage. In 2000, his wife Wilfrida Fernandes and  Menino Fernandes embarked on a culinary journey, laying the foundation for their establishment. Inspired by his exploration of traditional Goan dishes and fuelled by a desire to honour their coastal hometown, they introduced the innovative Bhatkar Thali. This special offering, named “Gorib Bhatkar Fish Thali,” pays homage to the local Goan community, adding a personal touch that resonates with their patrons. Today, their expertise remains the cornerstone of Blue Heaven, guiding as they continue to celebrate the rich flavours and cultural heritage of Goa.

Despite Menino’s commitments abroad, his son Bryden took over, mastering the craft and elevating the restaurant to new heights. Recently, Bryden was nominated for Youngest Entrepreneur of the Year, and the restaurant was nominated for Best Restaurant of the Year, marking a significant milestone in their culinary journey.

In the dawn of the new millennium, against the backdrop of a landscape devoid of quality dining options in South Goa, emerged Blue Heaven as a beacon of culinary prowess. Initially specialising in the artistry of Thai and Chinese cuisine, the restaurant’s name was carefully chosen to evoke the boundless expanse of the sea and the endless canopy of the sky, promising patrons an experience akin to dining in paradise itself.

Served alongside local Goan sannas, kismoor, rice and gulab jamun or bebinca, it’s a symphony of flavors that transports diners to coastal bliss and showcasing our commitment to preserving Goa’s culinary traditions.

Starting a restaurant business in 2000 with my wife, Wilfrida Fernandes, is quite an achievement. Once introduced, the thali likely underwent iterations based on customer feedback. Balancing flavours, adjusting portions, and refining the presentation would have been part of the process. As satisfied diners shared their experiences, the Gorib Bhatkar Fish Thali gained popularity. Word of mouth is a powerful force in the restaurant industry. Over the years, the thali became a signature dish at Blue Heaven. Its legacy now extends beyond the restaurant— a testament to our vision and dedication.
