A traditional frozen treat which is native to India and loved by all. It is an easy 3 step recipe.
The good old “Kulfi” or as in Persian they say “Qulfi” which means a covered cup. The term refers to the moulds that were used to fill up and freeze the luscious and creamy milk preparation.
It is quintessentially a high-calorie frozen-dessert enjoyed by many in India. Especially during the scorching summers the combination of sweet and cold flavours of kulfi is welcomed with a sigh of huge relief.

Easy Sugar-free Mango Kulfi
Ingredients:
• 10 soaked cashew-nuts
• 10 soaked almonds
• 1/3 cup coconut milk
• 3 tbsp Tender coconut flesh (malai)
• 5 soaked dates
• 1 cup Alphonso Mango puree
• 2 tsp instant oats
• A pinch of cardamom powder
• A few saffron strands
Method :
Step-1
• Soak the cashew-nuts, almonds & dates in water for a couple of hours.
• Soak a few saffron strands in a tsp of coconut milk.
Step -2
• Roast the instant oats for a couple of minutes on a hot pan and keep to cool at room temperature.
Step-3
• Blend all the soaked ingredients along with the roasted oats, mango puree, coconut milk, cardamom powder and fill into the kulfi moulds,
• Freeze overnight or for atleast 5-6 hours.
• De-mould and serve chilled.
You can garnish the kulfi with finely chopped nuts of your choice or just a few saffron strands.
Handy Tips :
• If you like the kulfi a bitsweeter you can add a tsp of jaggery powder while blending the ingredients
• You could also use maple syrup or honey instead of jaggery.
