Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 6 egg yolks
  • 1 cup coconut milk
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg powder
  • 3 tablespoons sugar caramel (for darkened layers)
  • Melted ghee (clarified butter), as needed

Instructions

In a large bowl, whisk sugar and egg yolks until combined. Gradually add coconut milk, stirring until sugar dissolves. Sift flour, salt, and nutmeg into the mixture, ensuring no lumps. Strain for smoothness. Divide batter; add caramel to one portion. Preheat oven. Grease pan, layer with darker batter, bake. Add ghee, lighter batter, bake until set. Repeat layering, finishing with ghee. Cool, loosen edges, unmold, slice, and serve.

  • 2 tablespoons ghee (clarified butter)
  • 1/2 teaspoon cardamom powder

Instructions

Combine heavy cream, whole milk, and sugar in a saucepan; heat until sugar dissolves. Let cool. Meanwhile, prepare grated coconut and chana dal paste. Pour cooled cream mixture into ice cream maker and churn. In a pan, cook coconut and chana dal paste with ghee and cardamom until thickened. Spread mixture, cool, and cut into pieces.
